Chia seed pudding

When I stopped eating dairy products my beloved yoghurt had to go (which was a big favorite). Instead I now make chia seed pudding with cacao for a chocolate flavor. It’s very easy, just mix the ingredients together and pop it in the fridge overnigt.

  • 3dl of almond milk (I ususally use 1 dl coconut milk mixed with 2dl of water)
  • 3 tablespoons chia seeds
  • 1 tablespoon almond butter
  • 1 teaspoon cacao
  • 1/2 teaspoon vanilla extract

I top it with almonds, coconut and blueberries when I eat it. It nicely replaces my yogurt snack in the afternoon. Since I don’t eat breakfast (read about the benefits of fasting here¬†Swedish) and work in the building industry (early lunch around 11) I need a snack (ususally chia seed pudding, fried eggs or an avocado) in the afternoon either at work around 3 or when I get back from work around 4. So then I eat the same amount as if I had eaten breakfast, I just move it to the afternoon instead.
