In my spirit of making things from scratch and foraging I made my own elderflower juice. I picked the flowers and mixed it together with lemon slices and sugar (a lot of sugar!) and let it sit for three days with an occasional stir. And yes I know I don’t usually eat sugar but I wanted to try to make my own juice since the trees were blooming. After the three days I strained juice to remove the flowers and lemon slices. The taste of elderflower was nice but it was way too sugary (surprise!) so I have frozen this batch to use as base for drinks. Hello prosecco or gin with elderflower, yum! For take two I’ll either drastically cut down on the sugar or use a smaller amount of honey instead.
