We went over to the garden on Sunday and collected our first harvest! The vegetables had grown A LOT since we were there last time. We picked carrots, sugar snaps, onions and some spinach to use for a shepherd’s pie. Amazing to be able to use vegetables that we’ve grown ourselves to cook with. It feels like the optimal low impact food. We are going back tomorrow to pick more and since we are going on vacation soon and want to make sure that we make use of all that we’ve grown.
There was also loads of red currant so we picked a (poop) bag full of them and I made some red currant crumble with almond flour, coconut flour and rolled oats 🙂
